Veggie Omelet

Ingredients

1.5 cups egg beaters                                        
1.5 cup spinach chopped
3/4 cup tomatoes diced
1 ounce low fat cheese
1 Tbsp light sour cream
2 Tbsp onions
1 tsp favorite hot sauce
2-3 olives diced

Directions

Cut up vegetables and set aside. Take pan and coat with canola or olive oil, place on the cook top, and heat to high. Pour half of the egg beaters into the pan and let cook for 1 minute until it starts to firm. Add in half of the vegetables and cheese. Once the egg base is firm, fold over one side of the omelet and let cook for an additional 1-2 minutes. Then remove and make 1 more omelet. Add sour cream and hot sauce and enjoy!

Makes 1 serving. Provides:
1 lean,  3 green,  3 condiments,  1/2 healthy fat.
