Tuesday- Healthy Recipe  

Shepards Pie

Ingredients: 
– 7 oz ultra lean ground beef or lean turkey (uncooked) 
– 1 Tbsp Worcestershire sauce 
– 1 low sodium beef bouillon cube 
– 1/4 cup spinach 
– 1/4cup green beans 
– 1/4 cup broccoli 
– 3/4 cup frozen cauliflower 
– 2 Tbsp Plain Greek Yogurt 
– 1 oz of low fat grated cheese

Directions: 
In a pan: Sauté ground beef, Worcestershire sauce, bouillon, spinach, green beans and broccoli. In a blender or magic bullet: add in cauliflower (after heated up) and Greek yogurt. Blend until the consistency of mashed potatoes. Take a pan, spread the sautéed meat and vegetables along the bottom of the pan evenly. Take the mashed cauliflower and spread it over the meat and veggies to coat the top. Sprinkle grated cheese over the top and cook in the oven at 350 degrees for 10-12 minutes or until the mashed cauliflower is cooked and cheese is melted. ENJOY!!!

Makes 1 serving: 1 lean, 3 servings of vegetables, 2 condiments and 1 healthy fat
